Grilled Chicken Wings In Homemade Sriracha Sauce, Topped With Fresh Microgreens

Back when I lived in the UK, this dish was not just requested, but demanded by my friends whenever we see each other for weekend soccer match.

Peter would bring his massive grill. Greg and Emily would drop by at my house and leave the chicken wings that they sell from them small grocery store. And I would marinate the wings with my homemade Sriracha sauce.
Then we will meet outside the local soccer pitch, fire up the grill, slap them wings in, and sing soccer chants throughout the match.
It may takes a lot of time to make it this dish. But those we good times.Anyway, I'm going to divide this into two recipes. And let's start with. . .

Your Ingredients:

Homemade Sriracha
1 pound of red jalapeno peppers without the stems
1/2 pound of red serrano peppers without the stems
4 cloves of garlic (peeled)
3 tbsp of light brown sugar
1 tbsp of kosher salt
1/3 cup of water
1/2 cup of distilled white vinegar
How To Make Your Homemade Sriracha
Chop the Serrano and Jalapeno peppers and put it into a blender (with seeds and membranes) along with garlic, brown sugar, salt, and water. Blend the mixture until it becomes a puree.
Transfer the puree into a large glass container. Keep the container covered and store it in a cool dark place to ferment for 3 to 5 days. Stir it at least once each day.

After 5 days, transfer the fermented mixture to a blender and vinegar;. Blend until the mixture becomes smooth.
Get a fine strainer and strain the mixture into a saucepan. Discard any skin, seeds and pulp that is left after straining.
Heat the sauce pan using a burner and bring to a boil. Continuously stir the mixture until it reduces in volume and thickens. This would take around 5 to 10 minutes.
Once done, allow the sauce pan to cool in room temperature before transferring the sauce to container for refrigeration.

Your Ingredients For Your Grilled Wings With Homemade Sriracha

4 pounds chicken of wings
1 tbsp of baking powder
1 teaspoon of kosher salt
For the Sauce 
4 tbsp of butter
1/2 cup of your homemade Sriracha
2 tbsp of honey
1 1/2 tablespoons of soy sauce
1 tbsp of finely chopped cilantro
1 tbsp of lime juice (freshly squeezed if possible)
1 teaspoon of rice vinegar

    How To Make Your Grilled Wings With Homemade Sriracha 

    Pat the wings with paper towels to make sure that they are dry. You then
    throw them in a large bowl along with salt and baking powder. Make sure that all the wings are coated evenly. Once done, transfer the wings on a baking sheet and refrigerate for no less than 8 hours.

    Over low heat, start melting your butter. Add in your vinegar, lime juice, cilantro, soy sauce, honey and homemade Sriracha until everything is evenly mixed. Set aside the mixture.

    Fire up the grill. Once the grill has reached the desired temperature, start placing the wings on the grill and occasionally brush them with your sauce for at least 40 minutes until the skin becomes crisp.

    Transfer the cooked wings to a large bowl. Add what's left of your sauce and coat the wings.

    Serve using a large plate with microgreens for garnish.
