You’d think whisking was quite simple. And generally it is!
But having a few little tricks can reduce the amount of time you take whisking by more than half, as well as reducing the chance of pain or fatigue in your hands and wrists.
Follow our guide to hassle-free whisking:
1) Pick a lightweight whisk
This should be a given, but we’re always amazed at how many people opt for heavy whisks, perhaps because people feel that a weighty whisk would be more robust and stand the test of time.
The truth is, so long as you buy a well-built whisk, it will last, regardless of how heavy or light it is.
The Chef Remi Kitchen Whisk Set is made from extremely lightweight silicone, which means you can whisk away for several minutes without feeling much tension in your hands, wrists, arms or shoulders.
The added bonus of silicone is that you can whisk away in any bowl. With stainless steel or metal whisks, there’s always the worry of scratching cookware and bakeware, so keep this in mind if you have a metal whisk.
2) Pick a whisk that has wires of different sizes
The reason for this is that whisks where the wires are all one length will mean that the movement of any mixtures being whisked is constricted due to the wires running in to each other.
A whisk that has shorter and longer wires is just much more efficient and whisks up mixtures faster.
Look for whisks where the wires do not meet at a point at the end of the balloon (a dead giveaway of same-length wires), and instead run into the handle individually.
3) Use a decent sized bowl
In general, this usually means the bowl needs to be bigger than you think! When you whisk in a big bowl, the mixture has more room to move around in, and the faster it becomes whipped.
So always opt for a large bowl.
4) When whisking eggs, pop egg yolks with the whisk first before whisking
This is also obvious, but we’ve seen many people spend a good minute or so beating eggs where the yolks are still yet to break!
Do your wrists and arms a favor and just pop those yolks before whisking.
5) When whisking anything but egg whites, whisk using a side to side motion
For fast whisking, we recommend you whisk from side to side. The reason why is that the back and forth motion causes more sheer force on the mixture, much more so than moving the whisk in a circular motion, or using the beating motion (see point 6).
When you whisk back and forth, the liquid mixture moves with your whisk to one side, but is then moved in the opposite direction as you move your whisk back. This means the liquid ‘crashes’ into each other, so it whisks up fast.
When you whisk in a circular motion, or you beat in a circular motion to one side of the bowl, the liquid is moving in one direction (clockwise if you’re right handed, or anticlockwise if you’re left handed).
This exerts far less pressure than when whisking back and forth as the liquid moves in one direction, and therefore takes you longer to whisk up.
6) When whisking egg whites, beat your whisk against the side of the bowl in a circular motion with the bowl tilted towards you (i.e. beating motion)
We only recommend using the beating motion with egg whites
As egg whites are quite viscous to start off with, the beating motion traps a lot more air into the mixture, so it whisks up into stiff peaks within 4-5 minutes.
It’s the only time we don’t recommend the side to side motion as, with viscous egg whites, it’s faster to trap air using the beating motion than it is to use the sheer force you get from the side to side motion.
As you’ll be making contact with the sides of the bowl with sharp, fast ‘beats’, you need a whisk with flexible wires.
Don't be afraid to take whisks!
The Chef Remi Kitchen Whisk Set is made from flexible, food-grade silicone.
Not only will it never damage the sides of any bowls, no matter what material the bowl is made from, the flex within the wires will also act like a spring when pressed into the side of bowl, flipping out and whisking your mixture a lot faster than your hands needs to move, reducing tension on wrists, arms and shoulders.
