Every household that loves to cook has their own version of mac and cheese. And our home was no different. I remember myself waiting for what seemed to be an eternity in front of the oven while my mother constantly told me not to do anything to ruin the dish.
This childhood memory of mine led me to create my own version of my mother’s mac and cheese. And I hope, with you reading this, my take on what I consider as comfort food will also make beautiful lasting memories for your children.

How to make your macaroni and cheese with chicken and mushrooms
Melt your butter in a saucepan over low heat. Then add in your flour and mix until both are blended together. This will take around 2 minutes.
Now slowly add in your chicken broth and mix continuously until it boils. Once this happens, add in your heavy cream.
Stir the mixture for 10 minutes until it becomes thick and smooth.
Now get a small bowl and start beating your egg yolks and slowly add in some hot sauce.
Once done, get the yolk mixture and add it into the saucepan.Stir until everything is combined and season with salt and pepper.
Get a large skillet and melt 2 tbsp of butter.
Once melted, add in your chicken and saute until it becomes tender.
This will take around 7 minutes. Once tender, transfer it to another dish.
Now go get the remaining butter to the skillet and add in the mushrooms. Saute until they start to brown.
Now add your garlic and scallions and saute for 2 minutes.
Afterwards, put the chicken back into the skillet and add in your parsley. Season it salt, pepper and nutmeg.
For your macaroni, bring a large pot to boil and cook your macaroni in it till al dente. This will take around 8 minutes. Once done, drain the liquid.
Now combine your sauce, cooked macaroni and mushroom and chicken mixture together with a generous sprinkling of parmesan cheese on top.
Place the mixture into a baking dish with a sprinkling of Gruyere.
