If you are looking for a great vegetarian meal without rice, then a quinoa, lentil & feta vegetarian salad is a good alternative.
Though I am not a vegetarian, I have many friends that are. And all of them say that this is a very filling and delicious meal. And even though I was tempted at first to add a bit of meat to it, who would know as I was cooking it at home, not doing so made me appreciate the dish.
So you are a long time vegetarian, or someone who wants to get into the lifestyle, this is a meal that you should try making. And this is coming from a meat lover.
200g of quinoa
1 tsp of olive oil
1 shallot or a 1/2 finely chopped onion
2 tbsp of roughly chopped tarragon
14oz 400g can of rinsed and drained green lentils
1/4 of lightly peeled and diced cucumber
100g of crumbled feta cheese
6 thinly sliced spring onions
zest and juice of 1 orange
1 tbsp of red or white wine vinegar
How to make your Quinoa, lentil & feta vegetarian salad
Take your quinoa, put it in a large pan of hot, boiling water for 15 minutes till it becomes tender. Once done, drain and set aside.
Now take a small pan and cook your opinion and shallots until they become soft.
You then add your tarragon, mix well and remove from heat.
Take the mixture and add it to your quinoa. Also add in the cucumbers, lentils, vinegar, orange zest and juice, onions and feta cheese.
Toss and serve!!
