Everyone assumes salads are healthy. Truth is, once you’ve added creamy dressings, croutons, bacons bits etc……it’s no longer healthy!
Now, as a mother to a ‘getting old far too fast’ 11 year old daughter, I’m mindful of overdoing the ‘health’ angle. I want her to be comfortable in her own skin, and I’m a big believer in a little of what you fancy.
At the same time, though, I do want her to think about her health, without thinking ‘diet!’
I’ve found some great salad ideas online which, although very healthy, are yummy enough for you to want that second helping…..and not because it’s just ‘good for you.’
Wilted Dandelion Greens with Toasted Mustard Seed
Yes, dandelion. You know, that WEED that kills other herbs and plants?
I never would have thought of using dandelion in a salad, but I've discovered that, not only are they edible, the strong peppery taste is better than most romaine lettuce, in my opinion.
This recipe does use clarified butter, but like I said, a little bit of what you fancy does no harm!
Delicata Squash, Shiitake, Kale & Quinoa Salad
My 11 year old wrinkles her nose up whenever I say something is 'healthy', so I try not to use that word around her. The truth is, however, this salad really is a superfood salad, what with great ingredients like kale, quinoa and shiitake.
Guess what? My daughter loves it (just don't tell her it's healthy!)

I love mango at the best of times, but this has to be my favorite dish. Add the soba noodles, and you have a satisfying salad that you would swear was more calorific then it actually is!
